July 7th, my Organics Live Box arrived!
Inside this magic box I found 2 oranges. Perfect for Orange Vanilla French Toast!
Breakfast is special in my house – as I love to make breakfast for my oldest son to get him started and satisfied for his day at work. He has a part time job at a local fast food restaurant, and refuses to eat there. He packs a lunch, and I make him a large breakfast to sustain him. He is also working out at the Good Life Fitness down the road… 2 hours every day – as he is trying to build up muscle. He is very selective about his foods and truly wants as much clean eating as he can get with protein.
SO with his customary Beef Patty, High Protein Greek Yogurt, I made French Toast, using Dempsters Ancient Grains bread, and duck eggs. Here is where the orange comes in.
This recipe makes two slices of French Toast – his shift starts at 7 – and I just can’t eat at 6 am yet… want more – double the recipe or triple… or – you get it…
Ingredients:
- 1 navel orange
- 2 slices Ancient Grains Bread (OR whatever you already use – but ditch the white bread people PLEASE!)
- 1 duck egg (You can but these at St Jacob’s Farmer’s Market – OR use 2 chicken eggs)
- 1 tbsp pure vanilla
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
In a shallow bowl, crack open the duck egg or 2 chicken eggs and whisk until frothy. Cut the orange in half across the middle of the two ends.. squeeze one half into the egg mixture, and whisk. You can use a zester to zest some of the rind into the mixture as well. Add vanilla, cinnamon, and nutmeg, and whisk again. It will have an odd colour due to the vanilla but don’t worry.
Heat up a skillet on medium heat, and place one slice of the bread into the egg mixture and let it soak for about 30 seconds. Flip over and repeat. Gently place it into the skillet, and let is slow cook so that it is not wet on the inside. About 3 minutes a side. While the first one is cooking place the second slice in the bowl to soak up … let it sit while you are cooking. Flip it at the same time as you flip the one in the skillet – and you will see it absorbs all the egg mixture.
Cook the second the same as the first.
Slice up the other half of the orange and place on the plate as a garnish or the fruit option … serve with pure maple syrup …
